Pete Magliocco - saute guy - Quincy, IL

i've been cooking for a living for about 12 years. through moving up and down this great state of illinois, i've had the pleasure of working at a variety of restaurants. i've worked at a vegan place, a french bistro, an italian place, steak houses, been a baker at a vegetarian coffee house, and now work saute at our local country club. i really enjoy the product we get to use at the club, although sometimes the rich folks are real haters, and that attitude can really bring you down if you let it.
attended the cooking and hospitality institute in chicago.
participated in and helped organize a great locally grown food festival here in quincy put on by the university of illinois ag extention office.

i told you guys i baked for a minute and went to chic in chicago.
right now, i mainly make sauces, pastas, and waitresses hate me.
i really like to cook italian food, and think i make an alright meatball. i'm also a fan of braising different meats, but that's more of an at home thing. at work, another one of my main responsibilities is a different veg and starch of the night every night.
funny, grandmas are the most influential chefs ever. i'm not the biggest fan of bobby flay.
