| I have been working with clients for 24 years through Personal and Private Chef Services, Cooking Classes, Nutrition Coaching and seminars on Health and Happiness and through Television shows on Public TV. I am the author of 2 books; Optimum Nutrition and a cookbook, called "Optimum Nutrition, In the Kitchen with Millie Barnes". I presently offers nutrition coaching, private and group nutrition/cooking classes, a full line of lactose, soy and gluten free desserts, including wedding cakes. I teach a Traditional Human Diet, based on healthy grass fed meats, traditional meat stocks, and low glycemic vegetables and fruits. I prepare and offer for sale; raw butter, fresh coconut milk yogurt, Kombucha Tea, sauerkraut, rich chicken and beef stocks and Though my passion and expertise is in dealing with people with food allergies, I am a well-known chef in Jacksonville, Florida. I have cooked at the Wine Cellar, Mossfire Grill, was the executive Chef at Juice ‘n Java and Heaven On Earth Café. I had my own restaurant and cooked for private clients for 24 years. I have taught private cooking classes in Jacksonville and Daytona, taught cooking at Daytona Community College and in the Jacksonville Continuing Education for Adults within the Duval County School system. I healed lifelong health problems through studying nutrition, and have spent the last 25 years teaching others to heal though teaching nutrition and healthy cooking. |

I am a very active 56 year old; I enjoys dancing to Reggae music, yoga, weightlifting, biking, camping, hiking, music, paper making, weaving, sewing, collecting vintage hats, fiber arts, Kirtan, Jewish studies, dancing and my family! |
